honestbeef Sesame Beef Salad

  • 250g beef eye-fillet
  • ½ teaspoon grated fresh ginger
  • 1 clove garlic, crushed
  • 1 tablespoon soy sauce
  • 1 tablespoon sweet sherry
  • 1 tablespoon sesame oil
  • 150g asparagus, trimmed & chopped
  • 100g snow peas
  • 125g dried wheat noodles
  • ½ teaspoon Dijon mustard
  • 1 teaspoon honey
  • ½ tablespoon white wine vinegar
  • 1 tablespoon olive oil
  • 1 green onion, sliced
  • ½ tablespoon sesame seeds, toasted
Combine beef with ginger, garlic, soy sauce, sherry & sesame oil in a bowl, cover & refrigerate for 10 minutes.
Boil, steam or microwave asparagus & snow peas, separately, until just tender. Rinse & drain well.
Cook noodles in boiling water until just tender. Rinse under cold water & drain well.
Drain beef, reserving marinade. Cook beef in a hot pan until browned both sides and cooked as desired. Remove from pan, cover& stand for 10 minutes. Slice thinly.
Add marinade to same pan. Simmer, uncovered, for about 2 minutes or until mixture thickens.
Combine marinade with mustard, honey, vinegar and olive oil in a large bowl. Gently toss beef, asparagus, snow peas & noodles with
marinade mixture, onions and sesame seeds.
