honestbeef Scotch Fillet with Caramelised Onions

  • 4 pieces of scotch fillet
  • 2 teaspoons oil
  • 1 tablespoon butter
  • 2 onions
  • Cracked black pepper for coating
  • 1 clove garlic, crushed
  • ½ cup tomato paste
  • ½ cup water
  • 2 teaspoons balsamic vinegar
  • 1 tablespoon oil, extra
Heat oil & butter in a frying pan over a low heat. Add onions & cook for 10-12 minutes until golden brown & caramelised. Set aside & keep warm.
Lightly coat both sides of steaks with cracked black pepper. Heat extra oil in pan and fry steak until cooked as desired. Remove from pan & keep warm.
Add garlic to pan & cook for 1 minute. Stir in tomato paste, water & balsamic vinegar. Simmer for 1-2 minutes.
To serve, place steak on plate, top with caramelised onions & drizzle with tomato sauce. Accompany with mashed potato or chips and salad.
