honestbeef Cajun Meat Loaf
- 500g minced beef
- 2 tablespoons butter
- 1 medium green capsicum, chopped
- 1 teaspoon salt
- 1 teaspoon cayenne pepper
- ½ teaspoon thyme
- ½ teaspoon pepper
- ½ teaspoon ground cumin
- 1 egg, beaten
- ½ cup bread crumbs
- ½ cup tomato sauce, divided use
- 1 teaspoon Worcestershire sauce
Preheat oven to 180 degrees Celsius.
Melt butter in a saucepan over medium-low heat. Add onion, capsicum, salt, cayenne pepper, thyme, pepper & cumin. Cook until vegetables are tender, stirring frequently, about 10 minutes.
Combine beef, egg, bread crumbs, ¼ cup tomato sauce and Worcestershire sauce in a medium bowl. Mix in sautéed vegetables.
Form mixture into loaf shape in a baking dish. Bake for 20 minutes.
Spread top with remaining tomato sauce and bake for 40 more minutes.
Serve hot with your favourite side dish.
