honestbeef Beef Stroganoff
- 1kg rump steak
- 2 cups beef stock
- 250g mushrooms, cleaned & sliced
- ½ cup flour
- 3 tablespoons butter
- 1 cup sour cream
- 3 tablespoons tomato paste
- 1 teaspoon Worcestershire sauce
- 1 tablespoon oil
- 1 large onion, finely chopped
- Chopped parsley
- Salt & pepper to taste
Cut beef into strips . Put flour, salt & pepper into a plastic bag, add meat, and shake to coat.
Heat oil in a large pan. Brown the beef and onion.
Slowly add beef stock and bring to the boil. Cover & gently simmer for 20 minutes.
In a small pot, cook mushrooms in the butter.
Add mushrooms to the meat. Stir in tomato paste and Worcestershire sauce. Slowly add small amounts of sour cream, stirring well after each addition.
Serve over pasta, with a sprinkling of parsley.
